Brunch is Served

These smoked salmon, egg and dill avocado-cups are the perfect go-to brunch. I promise they are easier to make than they look, and are packed with healthy fats & protein.

  • Organic Avocado
  • Free-Range Eggs
  • Smoked Salmon
  • Dill
  • Chilli Peppers & Flakes
  • Sunflower Seeds

  1. Cut the avocado in half and remove the seed. If the avocado core is small you might need to take a teaspoon and remove some more avocado to make room for the fillings.
  2. Fill the avocado-cups with slices of smoked salmon.
  3. Crack the eggs on top of the smoked salmon and bake for 10 minutes in a pre-heated oven at 180 degrees.
  4. Remove from the oven and garnish with dill, sunflower seeds, chilli flakes and fresh chilli. Season with black pepper.
