Brunch is Served
These smoked salmon, egg and dill avocado-cups are the perfect go-to brunch. I promise they are easier to make than they look, and are packed with healthy fats & protein.
- Organic Avocado
- Free-Range Eggs
- Smoked Salmon
- Chilli Peppers & Flakes
- Sunflower Seeds
- Cut the avocado in half and remove the seed. If the avocado core is small you might need to take a teaspoon and remove some more avocado to make room for the fillings.
- Fill the avocado-cups with slices of smoked salmon.
- Crack the eggs on top of the smoked salmon and bake for 10 minutes in a pre-heated oven at 180 degrees.
- Remove from the oven and garnish with dill, sunflower seeds, chilli flakes and fresh chilli. Season with black pepper.
