Massaged Kale Recipe
While it might seem odd to play with your food, kale is rather partial to a massage. A quick rubdown transforms it’s tough, fibrous structure into a soft, light, buttery texture. Like many other leafy greens (spinach in particular), it disappears faster than a toupee in a hurricane when it’s heated, so you will need to use a generous helping!
- Organic Kale
- Fresh Lemon
- Extra Virgin Olive Oil
- Salt & Pepper
- Homemade or Ready-made Tahini
- Cut out the central stems and place the kale leaves in a large bowl.
- For the dressing, squeeze the juice of one lemon and add a similar amount of olive oil.
- Mix the dressing with a pinch of salt and massage it in to the kale. It will take approximately 5 minutes for the cellulose-rich structure to break down as the heat from your hands, and acidity from the lemon gently ‘cook’ the kale. If you really can’t bear to play with your food, leave the kale in olive oil over night and it will change in to a similar consistency!
- Drizzle tahini over the salad and a sprinkle black pepper.
Add a lean protein and additional sweet salad to complement the acidity of the salad.
We made chilli, almond and sesame seed crusted chicken and a sweet balsamic beetroot salad.
